Real substitutes for 1 packet of yeast
Instant yeast
3/4 the amount of instant yeast for the active dry yeast called for
A real, direct swap for yeast-raised bread -- instant yeast is more concentrated, so use less, and it can be mixed straight into the flour without proofing first.
Active sourdough starter
1 cup active, bubbly starter replaces 1 packet yeast; reduce the recipe's flour and liquid by about 1/2 cup each
Works for real bread, but changes the flavor (tangier) and rise time (much slower) -- a genuine swap, not a quick one.
Baking powder
About 1 teaspoon baking powder per cup of flour
Not a true substitute for yeast-raised bread -- this only works for quick breads that don't need yeast's long rise and flavor development.
